OUR INSPIRATION

Over decades we’ve learned that the BEST possible food resides in the ALIVENESS at the intersection of what’s on the pulse of our emerging inspiration, plays to our strengths as craftsmen, celebrates the bounty of the season and region while embracing the creative constraints of the moment. 

That is to say, our most alchemically delicious food varies wildly based on the season, the dietary needs of our clients, and our own personal culinary cutting edge.

My mom, who didn’t much like to cook, did love the ritual of making Paella for our birthday celebration dinners. My globetrotting parents infected their youngest son with a sense that the world was available to me and I’ve spent my career celebrating global flavors.

Chef Anthony's Purple Menu

Chef Anthony says: “The Purple Menu is an example of how creativity in the moment can turn something that seems like an accident into something groundbreaking as a creator and artist. After 20+ years in the kitchen asking the question “What hasn’t been done with food before:” The Purple Menu strikes a chord for me. Color is something we can all relate to and I was an artist before I was chef, so using color as the framing for a menu feels authentic, playful and natural to me. It’s an essential expression of my celebratory nature.”
